Uttarakhand Food Recipe : Radish Kadhi( Jholi) Ingredients: 1. Rice 1/2cup 2. Fenugreek seeds 1tsp. 3. Cumin seeds 1tsp. 4. Red chilli 2 5. Kasoori methi(optional) 6. Coriander powder 1tbs. 7. Turmeric powder 1tsp. 8. Red chilli powder 1tsp 9. Buttermilk 2cups 10. Mustard oil 4tbs. 11. Radish 1 12. Salt as per taste 13. Coriander leaves Preparation: 1. Soak the rice for 1-2 hrs. & grind it to make a paste. 2. Cut the radish in small pieces & crush them. 3. In a pan mix the rice paste, buttermilk, Coriander powder, Turmeric powder, Red chilli powder & salt. 4. Heat oil in a pan add cumin seeds, fenugreek seeds, kasoori methi & red chilli. 5. Add prepared mixture & stir. 6. Add water according to sourness of buttermilk. 7. Now add radish & cook for 15 min. add coriander leaves & serve hot with rice. Bal Mithai Baal Mithai is made by cooking khoya (evaporated milk cream) with cane sugar, until it becomes dark brown in color, colloquially called "chocolate" for its color resemblance. This is allowed to settle and cool, and cut into cubes which are then garnished with small white sugar balls
